New Style Huevos Rancheros


Active Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • Tortilla chips
  • Fresh-shredded cheese
  • Mexican chorizo (Make your own… it’s fun and easy. I will post my recipe later)
  • 2 fried eggs
  • Salsa
  • Mexican crema (or substitute sour cream)
  • Cilantro
  • Options:
    • Add sliced avocado or fresh guacamole for added richness
    • Add refried or black beans for extra protein

Process:

  1. Place chips on oven-safe plate and sprinkle with cheese.
  2. Place plate into oven set to broil for a few minutes. Keep an eye on this and pull out when cheese is melted and top points of chips are just starting to brown.
  3. Warm chorizo in a frying pan.
  4. Using a second frying pan, fry to eggs to your liking (I recommend sunny side up).
  5. Sprinkle Chorizo over cheesy chips.
  6. Place eggs atop.
  7. Top everything with a drizzle of cream, a few spoons of salsa and chopped cilantro.
  8. Enjoy!
