Ingredients:
- 1 burrito-size flour tortilla
- 2 tbsp. pizza sauce
- Mostly tomato paste
- With a little EVOO drizzled in
- Dried oregano
- Fresh or dried garlic
- Salt & fresh-cracked black pepper
- Fresh-made spicy Italian sausage (you can use store-bought, but it’s really quite horrible compared to making you’re own… which is easy… I’ll post an Italian sausage recipe later)
- Chopped fresh mushrooms (any type will work just fine)
- Sliced black olives
- Fresh-shredded good-quality mozzarella cheese (this is key… don’t skimp)
Process:
- Pre-heat oven to 450°.
- Place tortilla on a round aluminum pizza sheet (or use a cookie sheet).
- Use back of a spoon to spread sauce lightly… not much is needed.
- Sprinkle ingredients evenly across tortilla.
- Top with plenty of shredded cheese (you should be able to just see the ingredients through the cheese).
- Place tortizza into oven and bake for about 10 minutes until cheese is golden and bubbly.
- Slice immediately, or alternatively, let cool one or two minutes to allow cheese to solidify. Enjoy!
