Sausage Tortizza


Active Time: 15 minutes

Total Time: 25 minutes

Ingredients:

  • 1 burrito-size flour tortilla
  • 2 tbsp. pizza sauce
    • Mostly tomato paste
    • With a little EVOO drizzled in
    • Dried oregano
    • Fresh or dried garlic
    • Salt & fresh-cracked black pepper
  • Fresh-made spicy Italian sausage (you can use store-bought, but it’s really quite horrible compared to making you’re own… which is easy… I’ll post an Italian sausage recipe later)
  • Chopped fresh mushrooms (any type will work just fine)
  • Sliced black olives
  • Fresh-shredded good-quality mozzarella cheese (this is key… don’t skimp)

Process:

  1. Pre-heat oven to 450°.
  2. Place tortilla on a round aluminum pizza sheet (or use a cookie sheet).
  3. Use back of a spoon to spread sauce lightly… not much is needed.
  4. Sprinkle ingredients evenly across tortilla.
  5. Top with plenty of shredded cheese (you should be able to just see the ingredients through the cheese).
  6. Place tortizza into oven and bake for about 10 minutes until cheese is golden and bubbly.
  7. Slice immediately, or alternatively, let cool one or two minutes to allow cheese to solidify. Enjoy!
