Ingredients:
- Tortilla chips
- Fresh-shredded cheese
- Mexican chorizo (Make your own… it’s fun and easy. I will post my recipe later)
- 2 fried eggs
- Salsa
- Mexican crema (or substitute sour cream)
- Cilantro
- Options:
- Add sliced avocado or fresh guacamole for added richness
- Add refried or black beans for extra protein
Process:
- Place chips on oven-safe plate and sprinkle with cheese.
- Place plate into oven set to broil for a few minutes. Keep an eye on this and pull out when cheese is melted and top points of chips are just starting to brown.
- Warm chorizo in a frying pan.
- Using a second frying pan, fry to eggs to your liking (I recommend sunny side up).
- Sprinkle Chorizo over cheesy chips.
- Place eggs atop.
- Top everything with a drizzle of cream, a few spoons of salsa and chopped cilantro.
- Enjoy!
