Ingredients:
- 1 lb. Pork Belly
- ⅛ c. Maple Syrup
- ¼ t. Popcorn Salt
- Pinch of Ground Cinnamon
- Pinch of Ground Cardamom
- Pinch of Ground Cayenne
Process:
- Preheat air fryer.
- Cut pork belly into large dices, keeping some fat, but trimming away any skin and large sections of pure fat.
- Place pork dices on a single layer in air fryer basket, press the “steak” button and press start.
- Every five minutes, remove basket and shake to brown pork on all sides.
- When cooking cycle is complete, remove pork to a bowl.
- Dust well with popcorn salt and lightly with cinnamon, cardamom and cayenne. Pour maple syrup over pork and toss to coat thoroughly.
- Return pork to basket and press “bacon” button.
- Check pork every two minutes. As syrup begins to bubble on edges of pork, remove pork to the bowl and toss in the remaining maple syrup.
- Return pork to basket and continue cooking. Repeat step 8, coating pork in remaining syrup for a third time.
- Continue cooking until syrup is sticky and starting to bubble. Remove pork to a plate and separate to cool. As pork cools, syrup will form a candy coating on outside of pork bites.
