Ingredients:
- 4 slices bacon
- 2 eggs
- ½ cup whole milk
- Pinch of salt
- Pinch of spice (use any of cardamom, ginger, cinnamon, allspice, etc.)
- 6 slices day-old baguette
Process:
- Cut bacon into half-inch dices and fry until just starting to crisp.
- Remove bacon bits to a plate, reserving grease in frying pan.
- Whisk remaining ingredients together.
- Return frying pan to medium heat.
- Place some bacon bits into frying pan in the shape of a slice of baguette.
- Soak a slice of baguette, flipping a few times, and place on top of bacon bits.
- Repeat steps five and six for two more slices.
- Flip when eggs are starting to brown. Bacon bits will be attached to each slice.
- Repeat steps five through eight with remaining three slices.
- Top with maple syrup and enjoy!
