Roasted Apricot Compote


Active Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 5 Apricots (or 3 peaches)
  • 1 T. Oil
  • ¼ t. Popcorn Salt
  • Pinch White Pepper
  • Pinch Allspice
  • 2 T. Honey
  • Mint (finely torn, plus one sprig)

Process:

  1. Halve apricots and remove stones.
  2. Brush with oil, and sprinkle with salt, pepper and allspice.
  3. Place apricot halves in basket, turn air fryer on, press the “veggie” button and press start.
  4. After 4 minutes, start checking each minute until apricots are starting to break down and starting to brown slightly.
  5. Remove apricots to a bowl and cancel program.
  6. Slice apricots into dices, add honey and torn mint, and toss well.

Serving suggestion: Place one or two scoops of vanilla ice cream into a bowl, spoon hot compote over ice cream, top with whipped cream and mint sprig.
