Ingredients:
- 5 Apricots (or 3 peaches)
- 1 T. Oil
- ¼ t. Popcorn Salt
- Pinch White Pepper
- Pinch Allspice
- 2 T. Honey
- Mint (finely torn, plus one sprig)
Process:
- Halve apricots and remove stones.
- Brush with oil, and sprinkle with salt, pepper and allspice.
- Place apricot halves in basket, turn air fryer on, press the “veggie” button and press start.
- After 4 minutes, start checking each minute until apricots are starting to break down and starting to brown slightly.
- Remove apricots to a bowl and cancel program.
- Slice apricots into dices, add honey and torn mint, and toss well.
Serving suggestion: Place one or two scoops of vanilla ice cream into a bowl, spoon hot compote over ice cream, top with whipped cream and mint sprig.
