Ingredients:
- 1 lb. Baby New Potatoes
- 2 T. Butter, Softened
- 2 T. Extra Virgin Olive Oil
- 1 Clove Garlic, Grated (or 2 Cloves Minced)
- 2 T. Minced Fresh Herbs (Such As Rosemary, Thyme and Oregano)
- ¾ t. Sea Salt
Process:
- Potatoes that are grape-sized should be used whole. If you’re potatoes are larger than grapes, halve or quarter as needed to achieve grape-sized pieces. Note: Using grape-sized whole potatoes is preferred as the uncut skin will retain moisture, steaming starch to mashed potato consistency without drying the potato.
- Add potatoes to air fryer basket and toss with half of the olive oil.
- Turn air fryer on, press “vegetable” button and press start.
- While potatoes are roasting, combine butter, remaining oil, garlic, salt and herbs.
- When air fryer beeps, shake basket to ensure even cooking on all sides.
- When cycle finishes, insert a toothpick into largest potato to confirm doneness. Toothpick should slide in with little resistance, and potato should fall off, when pulling toothpick away. Start a second vegetable cycle and watch the time carefully if your potatoes need a new more minutes.
- When potatoes are cooked through, baste with half the herb mixture and continue to cook for two more minutes.
- Remove potatoes to a serving bowl and top with remaining herb mixture. Finish with fresh cracked black pepper and serve while pipping hot.
