But the right dessert recipes can produce extraordinary experiences, right?

Actually it's more ordinary than that...

...But just like way back when we believed the earth was flat and we could tip off the edge if we went too far... well some explorers did, and... what an experience!

Lemon Posset

Tangy and rich, this clever little do-ahead dessert uses no eggs or gelatine, but sets beautifully like a custard due to the reaction between the lemon juice and cream.

You'll have to stop guests eating more than they should, trust me.

Ingredients

  • 450ml whipping cream
  • 125g caster sugar
  • 60ml lemon or lime juice
  • Lemon or lime crunch topping

  • 2 tsp dark brown or demerara sugar
  • 1 tsp finely grated lemon or lime rind

Method

- Combine cream and caster sugar in pot and bring to boil, stirring.
- Reduce heat and boil for 3 minutes, stiring continuously (it will try and boil over, don't let it!).
- Remove from heat and stir in lemon juice. Taste and add a little more lemon juice if needed.
- Leave to cool for 10 minutes, then stir again and pour into serving bowl, or 4 small individual bowls.
- Refrigerate for several hours until set.
- To make topping, mix the brown or demerara sugar and rind together and sprinkle on top of pudding just before serving.

Serves: 4, or more as a topping on fruit
Preparation time: 15 minutes

slim french apple tart – dessert recipes The French go overboard with most things... elegance, arrogance... and gastronomically. Such wonderful food!

This French dessert looks and tastes like a classic, but is one of the simplest to make:

Slim French Fruit Tart

Ingredients

  • 400g flaky pastry
  • 2 large apples, peeled, cored and sliced thinly (also works well with pears, peaches, nectarines and apricots)
  • ¾ cup apricot jam (can use other jam, such as plum)
  • icing sugar for dusting
  • Whipped cream for accompaniment

Method

- Preheat oven to 200C° (390F°).
- On a floured surface, roll pastry out thinly and cut into 2 x 24cm circles. Prick all over with fork.
- Moisten both edges all around with water. Fold in edges and press down so there is a raised border around each circle.
- Arrange apple, or other fruit slices neatly inside each border.
- Bake 25 minutes until very well cooked, but not too dark. Remove from oven.
- Gently heat jam in small pot, remove just before boiling. Brush tarts all over top well with jam.
- Bake further until jam bubbles and pastry is nicely browned. Remove from oven.
- Dust with icing sugar and serve with whipped cream.

Serves: 4-6
Preparation time: 30 minutes
