Welcoming Sausage and Rice Crockpot Meal

Hearty and simple to make...a children's fave too!

Sausage and rice crockpot meal Ingredients

  • 500gms sausages
  • 1 large unpeeled apple, cored and chopped
  • 1 medium/large onion, chopped
  • 2 medium carrots, washed and chopped
  • 1½ cups uncooked brown or white rice
  • 1 Tbln raisins
  • 2 Tblns chopped fresh parsley
  • 1 tsp honey
  • ½ tsp allspice
  • ½ tsp cinnamon
  • 3 cups water
  • Salt and pepper to taste

Method

- Throw all ingredients into crockpot and cook on low for 7-8 hours, or high 4-5 hours.
- If you wish you can brown sausages in pan first.
- Check liquid consistency a couple hours before end and top up if necessary.

Serves: 4-6, made in a 4.5 lt (2 quart) crockpot
Preparation time: 15 minutes

Slow Cooker Shepherd's Pie

Good ole family meat 'n spuds in a novel way.

Ingredients

  • 3 cups mashed potatoes
  • 500gms (1 lb) mince (lamb, beef, turkey or pork)
  • 2 garlic cloves, crushed and chopped
  • 2 cups mixed vegetables chopped small (eg: broccoli, tomatoes, carrots, celery, spinach, beans, peas, corn, or use frozen veggies)
  • 1 medium onion, chopped finely
  • ½ tsp turmeric
  • ½ tsp paprika (and extra to sprinkle for garnish)
  • Salt and pepper to taste (approx ½ tspn each)
  • 1 cup water
  • 2 cups cheese, grated
  • Spring onions or chives to garnish

Method

- Brown mince in frypan with onion, spices and garlic in a touch of oil.
- Drain excess fat off.
- Put meat in bottom of slow cooker and mix in vegetables.
- Add cup of water, then two cups grated cheese.
- Press down mashed spuds on top and sprinkle with paprika.
- Cook covered on low for 6 or so hours, or high for 3 hours.
- Remove lid for last 30 minutes to stop sogginess and top to harden slightly.

Serves: 4, made in a 4.5 lt (2 quart) crockpot
Preparation time: 35 minutes

Spicy Cabbage and Beans

Throw it together and call it a soup or stew.

Ingredients

  • 3 cups cabbage, roughly sliced
  • 2 large onions, chopped
  • 4 large tomatoes, chopped (or use canned tomatoes)
  • 1 cup water, stock or tomato juice
  • 1 tin beans, drained (red kidney beans are good, or mixed beans)
  • 1 tsp oregano
  • 1 tsp honey
  • 1 small chilli pepper, finely chopped (or use ¼ - ½ tspn dried chilli powder or flakes)
  • Salt and pepper to taste

Method

- Mix together all ingredients well in crockpot and cook low for 6-8 hours, or high 4-5 hours.

Serves: 4-6, made in a 4.5 lt (2 quart) crockpot
Preparation time: 20 minutes
